There’s nothing like the satisfaction of putting together a delicious home cooked meal (or mixed drink!). While we’ve been working from home, many Overabove team members have been experimenting with new recipes and perfecting old favorites. We asked everyone to submit their favorite summer recipe but most of these can be enjoyed year-round. Bon appétit!
AIR FRYER BAGELS

INGREDIENTS
- 1 Cup unbleached all-purpose flour, whole wheat or gluten-free mix, (5 oz in weight)
- 2 Teaspoons baking powder (make sure it’s not expired or it won’t rise)
- 3/4 Teaspoon kosher salt (use less if using table salt)
- 1 Cup non-fat Greek yogurt (not regular yogurt, it will be too sticky. I used Stonyfield)
- 1 Egg white or whole egg, beaten
- Optional toppings: everything bagel seasoning, sesame seeds, poppy seeds, dried garlic flakes, dried onion flakes
INSTRUCTIONS
Air Fryer Method:
- In a medium bowl combine the flour, baking powder and salt and whisk well. Add the yogurt and mix with a fork or spatula until well combined. It will look like small crumbles.
- Lightly dust flour on a work surface and remove dough from the bowl. Knead the dough a few times until dough is tacky, but not sticky, about 20 turns (it should not leave dough on your hand when you pull away).
- Divide into 4 equal balls. Roll each ball into 3/4-inch thick ropes and join the ends to form bagels.
- Top with egg wash and sprinkle both sides with seasoning of your choice.
- Preheat the air fryer 280F. Transfer in batches without overcrowding and bake 15 to 16 minutes, or until golden. No need to turn. Let cool at least 15 minutes before cutting.
ZUCCHINI BAKE

MAIN INGREDIENTS
- 3-4 Cups yellow, green or combination grated zucchini, squeezed dry with a towel or paper towels
- 4 Eggs, beaten
- 1 Medium onion, minced (I used powder, didn’t have onion)
- 1 Clove garlic, crushed
- 1/2 Cup grated cheese (used Monterey Jack)
- 1 Cup Bisquick (I used a gluten free mix)
- 1/2 Cup olive oil
- 1 Cup grated mozzarella
- Salt, pepper and parsley to taste
FOR THE TOPPING
- 1 Sleeve of Ritz or similar crackers
- 1/2 Stick butter (melted)
- 1 Cup panko breadcrumbs
DIRECTIONS
- Mix main ingredients together and place in a lasagna-type pan
- Bake at 350F for 25 minutes
- Crush crackers and combine with melted butter and panko crumbs
- Layer on top and bake an additional 15 mins
PUMPKIN SPICE PANCAKES

GAZPACHO

INGREDIENTS
- Day old French bread, 4”
- 3 Garlic cloves
- Olive oil
- 5 Medium tomatoes, cored
- 1 Small cucumber, peeled and seeded
- 1 Small red pepper
- Vidalia onion, quartered
- Salt
- Red wine vinegar (optional)
DIRECTIONS
- Tear up bread in food processor
- Add garlic to make a paste
- Drizzle olive oil and let sit
- Add tomatoes, cucumber, red pepper and onion, then puree
- Add salt to taste
- Add red wine vinegar if needed
- Refrigerate at least 2 hours before serving
Will be light pink in color
DETOX SMOOTHIE

INGREDIENTS
- 2 Bananas
- 2 Cups wild blueberries
- 1 Cup cilantro
- 1 Cup orange juice
- 1 Teaspoon barley grass juice powder
- 1 Teaspoon spirulina
- 1 Small handful of Atlantic dulse
- Optional: water or coconut water or fresh orange juice to blend
DIRECTIONS
In a high speed blender, blend all ingredients until smooth. If a thinner consistency is desired, add up to 1 cup of water. Enjoy!

SUMMER CUCUMBER AND TOMATO SALAD

INGREDIENTS
- 2 English cucumbers
- 1/3 Cup red wine vinegar
- 1 Tablespoon sugar
- 1 Teaspoon salt
- 2 Packs of cherry tomatoes
- 2/3 Cup chopped red onion
- 1/2 Cup chopped mint leaves
- 3 Tablespoons olive oil
DIRECTIONS
Peel and cut cucumbers in half, lengthwise, and scrape out seeds. Cut cucumber into ½ inch slices. Put in bowl. Add in vinegar, sugar and salt. Let stand for 1 hour at room temperature. Stir occasionally. Cut cherry tomatoes in half. Add cut tomatoes, onion, mint and olive oil to cucumbers and toss. Enjoy!

ROASTED CORN AND BLACK BEAN SALAD

- 1 Can black beans (drained)
- 2 Ears of grilled/roasted corn (or a 10oz package of frozen roasted corn kernels)
- 1 Small red pepper
- Scallions
- 1-1/2 Teaspoons ground cumin
- 2 Teaspoons Franks Hot Sauce
- 1 Lime (juice)
- 2 Tablespoons olive oil
- Salt and pepper

COUS COUS SALAD

INGREDIENTS
- 1 Cup cooked pearl couscous (let cool)
- 1 Red pepper chopped
- 1 Yellow pepper chopped
- A couple of mini cucumbers, chopped
- Kalamata olives
- Feta Cheese
Dressing:
Dissolve 3/4 tablespoon of coarse salt in juice from 1 lemon
Whisk in 6 Tablespoons of olive oil
Add finely chopped garlic and fresh ground pepper
Mix it all up and enjoy.
